RECIPE: Turkey Chili
This recipe was given to me by one of my mentors who whom is a chef. We was never a big fan of beef chili and I was wasn’t a fan of turkey chili. One day he had me make it for a special and walked me through the process of making the turkey chili. The most important thing was to simmer and let it cook for a while so all the ingredients can come together.

The story about this chili is that the chef who taught me how to make this turkey chili wasn’t big on Meat some would say that he’s a pescetarian because all we would ever see him eat was fish. But the Truth was that we would sometimes eat the turkey chili. He’s shown a lot of cooks how to make it and no one was getting it right. I would see him over and over again coming out of his office trying the chili and something just wasn’t right. Sometimes it wasn’t cooked long enough sometimes there was not enough spices to it it was always something wrong with the chili. And for some reason no one really seemed to get it. As a chef I know that as a chef want a certain taste and a certain flavor and that’s what he was trying to get at. So one day I ask him if he can show me how to make it. And he replied are you sure you’re up for that challenge I said of course. So he he showed me how to do it it took a few times for me to finally get it down. But I did. And there are times where I didn’t let it cook long enough or I didn’t put enough of a certain spice in there. So today I will be putting his little touches into this chili. I hope he is proud looking down on me from heaven.

Recipe: Chili Carne Con Frijoles

This chili is from my hometown in Durango it’s not your typical chili that you find that is red we use green chilies as well as frijoles de la olla and  carne  de puerco which is pork. It brings back nice memories of me growing up in Durango

My great-grandma from Durango showed me how to make this chili from a small age. I absolutely loved it when she would make it it was my favorite and I had no idea that it was called chili I would call it carne con frijoles. one day I was coming in from outside from helping out my grandfather on our farm and my grandma was making this chili she told me to come on next to her so she could show me how it was made since she knew it was my favorite and she said one day that I would be able to make it for my family. And until until now I still make it at home and my kids and my wife absolutely love it.
